Japanese citrus essential oil is extracted by our original "whole peel shaving ®process". This method, rarely seen in Japan, extracts essential oil by shaving only the outer peel. Since it does not come in contact with the juice, the essential oil is less likely to be altered. After the rind is scraped off, the round fruit (pulp) is crushed with a roller to press the juice without the skin.
After squeezing the juice, the fruit, which still contains plenty of Japanese citrus flavor, is soaked with large grains of glacial sugar. No heat is applied and the fruit is stirred for four days. When pressure is applied to the resulting sweet, sour, and fragrant candied Japanese citrus, a drip drips out. This is the "Citrus Cordial" of the Yamakami Kaju Herb Garden, a thick, sweet concentrated syrup.
We also make spirits from the squeezed citrus fruits. By adjusting the alcohol content, we can create a whole Japanese citrus craft liqueur with a refreshing taste and the character of the fruit. Currently, Yuzu and Iyokan liqueurs are available. Sudachi and Japanese Lemon will follow in the near future.
