After juice is extracted with our proprietary Marugoto Peel (R) method, the iyokan fruit is combined with cane sugar and yeast for fermentation and distilling on-site. The resulting spirit is combined with the rich, savory, acidic flavor of no-peel extracted iyokan juice and the easy sweetness of the cordial for a sweet-and-sour finish. It goes down well and it's full of iyokan flavor right to the end.
