The yuzu in the spirits comes from the pomace left over after pressing for juice. The spirits are produced at the Yamagami Citrus & Herb Garden by adding yeast and cane sugar, and are fermented on-site. The undiluted liquor goes through a single distillation to create a spirit that maintains the aroma and flavor of the original yuzu. The yuzu juice is produced with the peel-free pressing method. The fruit is only pressed after removing the peel using the Marugoto Kawakezuri method (and what remains is then fermented). There is almost none of the bitterness that is usually associated with citrus peels, and the resulting mouth feel is clean and refreshing. This carbonated liqueur blends these two rare materials together. The strong astringency of the yuzu is minimized, the bubbles are small and refined, and the mouth feel and aftertaste are pleasant and refreshing.
