After essential oil and juice are extracted with the Marugoto Peel (R) method, Japanese lemons still have plenty of fragrance and flavor left. We cover them in rock sugar and stir without heat for four days.The resulting sugar-preserved liquid has an excellent combination of sweetness and sourness. We slowly add pressure to extract a thick, concentrated lemon syrup for our Lemon Cordial. We recommend mixing it with water or soda at a ratio of 5-7 to 1. The drink combines the refreshing flavor of citrus with the slight bitterness of lemon, and is suitable for both adults and children. During colder times of the year, try it with hot water or black tea to diffuse the lemon aroma.
