This jam combines "pressed vinegar from fully peeled domestic Japanese yuzu" with the mouth feel from the yuzu's inner skin and sacks. The sweetness comes from honey and beet sugar. *At the time of shipment, all products have at least two months to their best-by dates.
Extracting yuzu juice is a laborious process. We begin with a machine called the "Pelatrice" that uses force to scrape off the outer peel, leaving a white ball of fruit. This is then pressed as far as possible. The resulting juice is distinguished by having fewer better flavonoids and limonoids than conventionally extracted juice from unpeeled fruit.
