We use Hayward kiwifruit as the raw materials because of its excellent balance of sweetness and acidity. The fruit is cultivated with the circular peeling method, which uses no plant growth regulators. Instead, the circular peeling method encourages growth by peeling off ring-shaped pieces of bark from the kiwi vine. The process is not only labor-intensive, but it results in lower yields, though each individual fruit has higher sugar content.
