Squeezed Vinegar of Whole Peeled Japanese Green Lemons is the straight juice of green lemons from Ehime Prefecture, available only for a few months during the harvest season. The green lemons are harvested on Omishima Island in the Seto Inland Sea, which was also introduced in Yamakami Kaju Yakusyoen STORY . In this issue, we would like to introduce a recipe using this straight juice, recommended by the staff of Matsuyama Oil and Fat.

Blue Lemon Lemon Shibori Vinegar: 2 tablespoons, Citrus Cordial Lemon: 2 tablespoons (or sugar or honey), Soda Water: 150mL

1/2 cup (about 100 cc) blue lemon squeezed vinegar, 2 eggs (about 110 g), 100 g unsalted butter, 1 cup (about 130 g) super white sugar
